Mexicalli Pie by Susan

Ingredients:
16 oz 90% lean Ground Beef
1/2 C Chopped Onion
1/2 C Chopped Green Pepper
1 1/2 C Frozen Whole Kernel Corn
1 C Chunky Salsa
3/4 C Kraft Shredded 2% Cheddar Cheese
1/8 tsp Black Pepper
1 Cup Crushed Fritos

Assembly:
In a large non-stick skillet brown meat, onions, and green pepper. Add corn, salsa, cheese, and pepper to mixture.

To Freeze: Allow to cool and place in freezer bag. Place one cup of Fritos into separate freezer bag and crunch them up.

To Serve: Allow meat mixture to thaw completely. Spray a pie plate with cooking spray. Add meat Mixture and top with crushed Fritos. Bake at 350 degrees for 30-45 minutes or until the center is hot. Allow to sit for 5 minutes before serving.

  1. We ate this last night and there was nothing left. The recipie says it will feed 8, but I still think it is a little light and 6 is more realistic. Although that included my daughter having thirds!

  2. I agree with Susan, the 5 of us finished this off with no problem. It would be difficult to feed 8. It was good, but I think I might try adding taco seasoning to the meat before mixing it all in for a little more Mexican flavor. We all like spicy food though, so that might not be for everyone.

    LOVED IT!!!! Chad and I just added a little of my homemade HOT salsa and a little sour cream. The kid s liked it alot too!

  4. yum!!! Wouldn't change a thing. It is definitely not a company dish seeing as when you look at it it has that "has someone already ate this?" look about it. It tastes great though.
