Meatballs, Mashed Potatoes and Cream Sauce by Erica

Ingredients:
MEATBALLS (1 batch)
1 egg, beaten
1/4 cup milk
2 Tbs. Ketchup
1 tsp. Worcestershire sauce
3/4 cup quick-cooking oats
1/4 cup finely chopped onions
1/4 cup minced fresh parsley
1 tsp salt
1/4 tsp pepper
1 1/2 lbs. ground beef
3 tbs. flour

In a large bowl, combine the first nine ingredients. Crumble beef over mixture and mix well. Shape into 1 1/2 in balls. Roll in flour, shaking off excess. Place 1 in. apart on greased baking pan. I placed on cookie cooling racks to keep from sticking.

Bake uncovered at 400 degrees for 20 minutes.

Drain Meatballs on paper towels, transfer to a serving dish.

CREAM SAUCE
2 tbs butter
2 tbs flour
1/4 tsp thyme
salt and pepper
1 can chicken broth
2/3 cup heavy whipping cream

Melt butter in a saucepan over medium heat. Stir in the flour, thyme, salt and pepper until smooth. Gradually add broth and cream. Brig to a boil; cook and stir for 2 minutes or until thickened.

MASHED POTATOES
2 lbs. of potatoes, peeled and cut
1/4 cup of milk
1/4 cup of butter

Cook potatoes until tender, in a mixing bowl blend potatoes, milk and butter until smooth.

Serve meatballs on top of mashed potatoes with cream sauce on top.

To Freeze: Place potatoes in the bottom of a pan, place meatballs on top. Cover with foil. Put cream sauce in a one quart freezer bag and place flat on top of the foil. Cover entire contents with foil. Freeze

To reheat:
Take off top layer of foil. Remove cream sauce packet. Thaw.
Heat in oven at 350 for about 20-30 minutes.
Warm sauce on stove or in microwave.
Pour sauce over individual servings.

    Did you think I was being rude or something?? I'm very confused by that comment...I was simply asking a question with absolutly no hostility or judgment to a group of women who I appreciate posting each month.

    I must say I'm a bit put off by this, I asked and thanked you but I see what wasn't good enough for you?

  4. The problem with typed comments versus verbal is that statements that are meant to be taken one way are sometimes taken another. I don't believe that anyone meant to be nasty here. Please understand that the Freezer Friendz maintain this blog without any form of compensation. Any recipes that are shared are shared for the benefit of other FF to know ingredients and cooking instructions. It has evolved into a world-wide readership, which we are thrilled about. We LOVE sharing our meal ideas with others! I would certainly hope that folks would have an understanding that our members have lives outside of this blog and that they do their best to provide recipes promptly. Occassionally life circumstances cause a delay. I'm sure that "anonymous" did not mean to imply impatience. Perhaps all of us need to use more smiley faces in our comments. :) Let's all be Friendz!

  6. Dear Anonymous, I am sorry to have put you off. I completely agree with Jackie that if I know I have a responsibility and have not quite gotten to it, then it is a bit stressful being reminded that it is not available for the world to see, regardless of the way it was written. I did need to get the recipe up, and thanks for making me do it. It is a very tricky balance speaking to people over the internet. Enjoy the recipe!

  8. The mashed potatoes and meatballs get frozen together in a baking dish. The sauce gets placed in a plastic bag and frozen separately, this way, you can pour it on top of the meatballs later.

  9. This sounds like a delicious freezer meal, and I'm anxious to try it. "To Freeze: Place meatballs in the bottom of a pan, place meatballs on top." Do the potatoes go on the bottom first, or the meatballs? Thank you in advance for clarification.

  11. This was a very delicious meal. My kids loved this as they never get meat balls. They were excited to try this one. Cheese was excellent on the side as those who wanted it could have it or they could have beef gravy. We used the leftover cheese sauce on Salmon the next night. Thanks!
