Beef & Parmesan Pasta Recipe from AllRecipes.com
Ingredients:
1 1/2 pounds lean ground beef
1 (14 ounce) can beef broth
1 (14.5 ounce) can Italian-style diced tomatoes
2 cups uncooked farfalle (bow tie) pasta
2 cups sliced zucchini, (1/4 inch thick)
3/4 cup grated Parmesan cheese
Same-Day Cooking and Eating Directions:
- In a large skillet over medium/high heat, brown the ground beef until no longer pink, breaking up into 3/4 inch pieces. Remove beef with a slotted spoon to a bowl. Pour off the drippings.
- Return the skillet to the heat and add the beef broth, tomatoes, and pasta. Stir to coat all of the pasta. Bring to a boil and reduce heat to medium.
- Cook, uncovered, for 15 minutes stirring frequently. Add zucchini and continue cooking for an additional 5 minutes or until pasta is tender.
- Return beef to the skillet and stir in 1/2 cup of the cheese; heat through. Sprinkle the remaining cheese over each serving.
Preparation & Freezing to Eat at a Later Date:
- In a large skillet over medium/high heat, brown the ground beef until no longer pink, breaking up into 3/4 inch pieces. Remove beef with a slotted spoon to a bowl. Pour off the drippings.
- In a gallon-sized freezer bag, pour in can of broth, can of diced tomatoes, cooked ground beef and UNcooked pasta. Press out air and seal bag.
- In a separate baggie, place your sliced zucchini.
- In another baggie, place your 3/4 c. shredded Parmesan cheese.
- Freeze baggies.
- On cooking day, thaw out all pieces. Pour contents of large baggie into your skillet. Add 1 cup of water. Bring to a boil and simmer for 15 minutes. Add in zucchini and simmer for 5 more minutes. Sprinkle cheese and serve.

ReplyDeleteGrown-ups like this - one kid ate it (but picked out the zucchini). Other kid said he liked it, but didn't eat much because he was too preoccupied with trying to shoot peas out of the peapod in his salad... *sigh*
This would be a good and fast dinner when you don't actually have anything in the freezer - making one family dinner is a snap!
The kids all liked this - even had seconds. The adults thought it was pretty bland.

ReplyDeleteOur entire family loved this meal and due to 2nd and 3rd helpings there was only a scoop left over for lunch the next day!!!Our noodles clumped after being thawed...but it didn't effect the taste.I added some seasoning while it cooked to pump the flavor a tad.We enjoyed this meal a lot!Thanks!
ReplyDeleteThis was alright. We thought it needed more flavor. I would love to know what seasonings the last commenter used. I tried to add Italian seasoning, but it did not taste good with that.
ReplyDeleteHey! It's Missy and I added onion pwdr, garlic pwdr, salt, and pepper. I don't typically measure spices...so, I would say it was a bit more than a "dash" of each!! I sprinkled it liberally. I had thought about Italian seasoning but went this route instead. We enjoyed it a lot spiced up a bit!
ReplyDeleteWe thought this meal was very starchy, even with adding 1 cup of water. I assume it's because I cooked it on the stove top on medium for 1 hour. Needs some spices added. Our kids wouldn't eat it even when picking out the zucchini.
