Ingredients:
4 c. shredded, cooked chicken
2 c. shredded Mexican blend cheese, divided
1 can cream of chicken soup
1/3 c. chopped onion
1 tsp. salt
1/4 tsp. pepper
24 oz. tomato sauce
1-1/2 Tbsp. chili powder
1/2 tsp. cumin
6 flour tortillas
Assembly:
In large bowl, combine chicken, 1 c. cheese, soup, onion, salt, and pepper. Mix thoroughly. In a separate bowl, combine tomato sauce, chili powder, and cumin. In greased 9x13, pour about 1 c. of sauce on the bottom of the pan. Lay out tortillas on counter, divide chicken mixture among the tortillas and spread mixture down the center of each tortilla. Roll each up tightly and place in pan. Pour remaining sauce over tortillas. Cover and freeze. Freeze remaining 1 c. of cheese for later use.
Serving Day:
Thaw completely in fridge. Bake, uncovered, at 350 for 45 min or until heated through. Top with remaining cheese and return to oven until cheese is melted.

Crockpot Orange BBQ Chicken by Jen

Ingredients:
3 lbs. Boneless Chicken Breasts
1
½ cup Sweet Baby Ray’s BBQ Sauce
1
½ cup Sweet Orange Marmalade
4 T Soy SauceAssembly:
Mix together BBQ sauce, orange marmalade, and soy sauce in a large ziploc freezer bag. Add Chicken and mix well. Freeze until ready to place in crockpot.
Serving Day:
Thaw, cook chicken in crockpot on HIGH for 3 hours or LOW for 6 hours {covered}
Cut up chicken into pieces and serve.

Cracked Out Chicken Casserole by Beth

Ingredients:

16 oz. sour cream
1 can cream of chicken soup
1 pkg (3 oz) bacon pieces
3 T. homemade ranch seasoning (see prior blog entry) or 1 pkg dry ranch dressing mix
2 c. shredded cheddar cheese, divided
2 lb. bag frozen tater tots
Assembly:
In large bowl, combine chicken, sour cream, soup, bacon, ranch seasoning, and 1c. cheese. Fold in frozen tots and stir until everything is well combined. Spoon into greased 9x13 pan. Cover and freeze.
Serving Day:
Thaw in the refrigerator. Bake at 350 for 45-60 min, or until lightly browned and bubbly. Add remaining cheese on the top. Return to oven until cheese is melted.

Loaded Chicken and Potatoes by Beth
Ingredients:
3-4 large potatoes, diced
1-1 1/2 lb. chicken breast, cubed (raw)
1 Tbsp. paprika
2 Tbsp. garlic powder
1 tsp. salt
1/2 tsp. pepper
1 Tbsp. hot sauce
2 Tbsp. BBQ sauce
1/2 lb. bacon, diced and cooked
1/2 c. green onions
2 c. cheddar cheese, shredded
sour cream
Assembly:
In large bowl, combine spices, hot, and BBQ sauces. Toss with raw chicken and potatoes, until pieces are evenly coated. Pour into greased 9x13 pan. Bake at 400 for 45-55 min. or until potatoes are soft and chicken is done. Cool. Cover and freeze. Freeze green onions, bacon, and cheese in separate bags.

Ingredients:
1/3 cup Hellmann’s Real Mayonnaise
3 Tbsp. diced roasted red peppers
1/2 tsp. garlic powder
1/2 tsp. dried oregano
1/2 tsp. dried basil
1/2 tsp. dried parsley
pinch crushed red pepper flakes
6 boneless, skinless chicken breast halves
Assembly:
Trim all fat from chicken breasts. Flatten chicken breasts to 1/4" thickness.

Here is a method I've found successful for flattening chicken.
- Lay a large piece of Glad Press 'n Seal on the counter.
- Place 6 breasts on top.
- Cover with another piece of Press 'n Seal.
- Seal well around the edges.
- Pound meat with a meat tenderizer. Move chicken to a tray lined with parchment paper.
Mix remaining ingredients in a bowl. Spread evenly on top of all 6 chicken breasts.
Place tray in the freezer and flash freeze the chicken. This means, leave chicken in freezer until each piece is individually frozen. This usually takes 3-4 hours. Place frozen chicken breasts in a gallon size Ziploc freezer bag. Label and freeze.
Serving Day:
Option 1: Take out the number of chicken breasts that you would like to cook. Place them in a baking dish. If any of the topping is stuck to bag, try to add it to the top of the chicken breasts. Thaw completely. Bake at 425 for 20-25 minutes or until cooked through.
Option 2: Cook from frozen. Bake on 425 for 45 minutes, or until internal temperature reaches 165-170 degrees.

Crockpot Chicken Philly Cheesesteak by Tiffany

- 3 tablespoons corn starch
- 1 cup chicken broth
- 2 pounds boneless skinless chicken breasts, cut into strips
- 1 large onion; sliced
- 3 bell peppers (the more colorful the better), cut into strips
- 1/2 teaspoon black pepper
- 1 clove of garlic, minced
- 6 slices of provolone cheese
- Add all ingredients to freezer bag, except cheese. (You can add broth and cornstarch.)
- Remove as much air as possible, seal, and freeze for up to three months.
- Place all ingredients EXCEPT for cheese and rolls in crockpot.
- Cook on “low” setting for 6 hours, or until chicken is cooked through and peppers are soft.
- Lay cheese over mixture.
- Cook on “low” for additional 10 minutes or until cheese is melted.
- Serve on a fresh, hot roll.

Mexican Stuffed Shells by Beth
Ingredients:
1 box jumbo pasta shells
1 lb. ground beef
1/2 large onion, diced
14 oz. can fire roasted tomatoes, diced
2 T. Jackie's taco seasoning (http://freezerfriendz.blogspot.com/2015/05/jackies-homemade-taco-seasoning.html)
2 c. Mexican shredded cheese
Assembly:
Prepare pasta shells according to box instructions. Rinse; run cold water over them; drain well. Brown ground beef with onion until cooked; drain off fat. Return beef to skillet and add taco seasoning and tomatoes. (I processed the tomatoes in a blender as to not have large chunks of tomatoes). Add 1 c. cheese to mixture. Stuff beef mixture into shells and arrange in greased 9x13 pan. I could fit about 24 shells into the pan. If there is any remaining beef mixture, pour on top. Cover tightly and freeze. Put remaining 1 c. of cheese in baggie and freeze as well.
Serving Day:
Thaw completely in fridge. Bake at 350, covered, for about 30-45 min (or until heated through). Remove lid and cover with 1 c. cheese. Return to oven and bake until cheese is melted and casserole is bubbly.

12-16 oz. frozen broccoli florets

In large saucepan, heat up soup, water, and cheese until cheese is completely melted, stirring frequently. Pour about 1/3 of the soup mixture on the bottom of a greased 9x13 pan. Fill the uncooked manicotti noodles with strips of chicken; place in the pan. Layer broccoli on top of noodles. Cover completely with the remaining soup mixture. Sprinkle with parmesan cheese. Cover and freeze.

Grilled Citrus and Herb Chicken by Tiffany
Ingredients:
1 pound boneless skinless chicken breasts (thin cut is best)
¼ cup olive oil
2 cloves of garlic, finely minced
the zest and juice from 1 lemon
the zest and juice from 1 orange
½ teaspoon dried basil
½ teaspoon dried oregano
¼ teaspoon dried thyme
salt and pepper to taste
2 tablespoons chopped parsley
Optional: lemon wedges for serving
Instructions:
1. Place the olive oil, garlic, lemon and orange zest, lemon and orange juice, basil, oregano and thyme in a resealable plastic bag. Seal and shake to combine.
2. Place the chicken in the bag, seal and shake until chicken is coated with the marinade.
Serving Day:
1. Thaw completely in fridge
2. Preheat the grill or a grill pan over medium high heat.
3. Remove the chicken from the marinade and season both sides generously with salt and pepper.
4. Grill for 4-5 minutes on each side or until chicken is cooked through.
5. Remove from grill and let the chicken rest for 5 minutes. Sprinkle with parsley and serve, with lemon wedges if desired.

6 or more slices Swiss cheese
Box chicken flavored stove top stuffing
1/4 cup butter, melted
Assembly:
Place chicken on bottom of baking dish. Cover with sliced cheese. Mix milk and chicken soup together in a small bowl and spread over chicken and cheese.
Serving Day:
Thaw completely in fridge. Sprinkle stuffing over top of chicken, cheese and soup. Melt butter and drizzle over the top of stuffing. Bake uncovered at 350 for 45-60 minutes.

BBQ Ranch Chicken by Jackie
Want a chicken recipe that is super easy and full of flavor? Try this! I tasted this chicken a few years ago on a sample day at Sam's Club. It was SO good that I asked the employee who made it for the recipe. Meijer has Sweet Baby Ray's BBQ Sauce on sale for 88¢ this week, so it seemed like the perfect time to make it for my Freezer Friendz. 🌝
Ingredients:
6 chicken breasts, rinsed and trimmed
1 c. Hidden Valley Ranch Dressing
1 c. Sweet Baby Ray's Original BBQ Sauce
Assembly:
Pour dressing and BBQ sauce into gallon size Ziploc freezer bag. Mix well. Place chicken breasts into bag. Seal bag. Make sure all chicken is well coated with sauce. Freeze flat.
Serving Day:
Thaw completely. Grill until cooked through.

Cilantro Lime Chicken by Jackie
This recipe is one of our family favorites! You can eat the chicken breasts as is or try one of the many ways we have enjoyed it. One of our favorites is to serve it over rice with a little sprinkle of shredded cheddar cheese sprinkled on top. We've also enjoyed it shredded as taco meat wrapped in soft tortillas. My kids really love it shredded and served with tortilla chips. However you choose to serve it, I hope you love it as much as we do!
Ingredients:
One 24-ounce jar medium or mild salsa
Juice from one lime
1/4 cup fresh cilantro, chopped
*3/4 tsp. chili powder
*1/4 tsp. garlic powder
*1/4 tsp. onion powder
*1/4 tsp. crushed red pepper flakes
*1/4 tsp. oregano
*1/2 tsp. paprika
*1/2 Tbsp. ground cumin
*1 tsp. sea salt
*1/4 tsp. black pepper

Thaw completely. Place in slow cooker. Cook on low for 6 hours.

CROCKPOT: HAWAIIAN CHICKEN by Tiffany

4-6 pre-made chicken or steak skewers removed from the skewer OR 4 chicken breasts OR 1-2 lbs. Sirloin or Round Steak OR a 1-2 lb. pork tenderloin
1 bottle of Trader Joe’s Island Soyaki Sauce
Fresh vegetables of your choice OR 1 bag of frozen stir fry vegetables
1 to 2 cups of fresh pineapple chunks OR 1 can of pineapple chunks, drained
1/4 teaspoon red pepper flakes, optional
Directions:
Spray crockpot with non-stick spray. Add meat, vegetables and pineapple to crockpot and pour the bottle of Island Soyaki on top. Cook on low 6-8 hours or high 4-6. Serve over a bed of rice.
Cooking rice:
Rinse rice under cold water. Place 3 cups water in sauce pan and bring to a boil. Add rice and bring to gentle simmer. Cove rice and turn heat to low. Cook 18 minutes. Remove lid and fluff with a fork.

Max and Erma's Chicken Tortilla Soup by Tiffany

Mix all ingredients together

Thaw all overnight in the 'fridge. You can either add both bags of soup and bag of chicken to a crock pot and cook on low for 4-6 hours or you can add to large soup pot, heat to a boil and then simmer for 1 hour. Top with tortilla strips.
- 2 (10 3/4 ounce) cans Cream of Mushroom Soup
- 2 (10 3/4 ounce) cans Cream of Chicken Soup
- 2 (10 3/4 ounce) cans condensed cream of celery soup
- 2 (10 3/4 ounce) cans cheddar cheese soup
- 2 (15 ounce) cans chicken broth
- 1 (15 ounce) cans diced tomatoes (or you can use 1 can of Rotel and skip the can of green chiles)
- 1 cup salsa
- 1 (4 1/2 ounce) cans green chilies
- 1 medium onion, chopped
- 4 fresh garlic cloves, minced
- 1 teaspoon chile powder
- salt and pepper, to your taste
- cooked chicken breasts, cut into small chunks
Assembly:
Mix all ingredients together

White Chicken Chili by Beth
Adapted from Taste of Home Feb/March 2001
Ingredients:
1 lb. chicken breast, cut into bite-size cubes
1 med. onion, chopped
1 T. oil
2 cans (15.5 oz) Bush's white chili beans (with mild chili sauce)
1 3/4 c. chicken stock
7 oz. can green chilies, chopped
1 1/2 t. garlic powder
1 t. salt
1 t. cumin
1 t. oregano
1/2 t. pepper
1/4 t. chili powder
1c. sour cream
1/2 c. whipping cream
Assembly:
In large saucepan, sauté chicken and onion in oil until chicken is no longer pink. Remove from heat and allow to cool slightly. Meanwhile, in gallon size freezer bag, dump in the next 9 ingredients (beans though chili powder). Add chicken and seal. Gently squish bag to mix ingredients. Freeze upright (with seal side up). In quart size freezer bag, dump in sour cream and whipping cream. Seal and squish bag to mix. Also, freeze upright.
Serving Day:
Dump frozen soup base into crock-pot (you may need to run warm water on outside of bag to loosen easier from the bag). Cook on low all day (8-10 hrs). Place sour cream packet in the fridge while soup base is cooking all day. If it's not thawed completely, microwave on a low setting just until thawed. Add sour cream contents to soup. Turn to high for about 10-15 min, or until heated through.
**To NOT use a crock-pot: Thaw both bags completely in the fridge. Pour soup base into large stockpot. Bring to boil; reduce heat and simmer, uncovered, for 30 min. Remove from heat; stir in the sour cream mixture and serve immediately.

Asian Toasted Sesame Chicken by Jen
Ingredients:
1 bottle of Asian Toasted Sesame Dressing
3 lbs. of chicken breasts
Assembly:
Place chicken in a gallon-sized freezer bag. Pour entire bottle of dressing over meat.
Serving Day:
Thaw completely. Discard marinade. Grill or bake until cooked to 160 degrees.
Crockpot - Cook low from frozen on low 6-8 hours.

Chicken, Broccoli & Bacon Pasta by Jackie

3 c. chicken, cooked and shredded
4 cloves fresh garlic, minced or 4 tsp. store bought, minced garlic in jar
1 c. heavy cream
1 c. milk
1 1/2 c. Kraft Italian 5 Cheese shredded cheese
12 oz fettuccine
2 cups frozen broccoli florets
1 c. cooked, bacon crumbles
1/2 tsp. salt
1/8 tsp. pepper
Assembly:
Mix heavy cream, milk, and minced garlic in a small saucepan. Bring to a boil. Add cheese and stir until completely melted. Stir in salt and pepper. Add chicken. Mix until chicken is coated. Cool. Pour into a quart size Ziploc freezer bag. Add bacon to a snack size Ziploc bag. Add broccoli to a sandwich size Ziploc bag. Place all three bags into a gallon size Ziploc freezer bag and label. Freeze flat.
